I'm guessing the name Hai Tien Lo 海天楼 is quite familiar to a lot of people knowing it as the Fine Dining Chinese Restaurant on top of the Pan Pacific Hotel Singapore. That's also how I guess it got its name. However recently they have revamped and shifted down to level 3 of the hotel. Other than the view to the outside, nothing was change or loss. The posh atmosphere is still there.
Recently they have roll out their very own Dim Sum Buffet. This is pretty exciting as the quality of food is quite certain as well as the idea of able to try the many signature dishes is already making the deal worth trying. Their buffet are available daily with a price difference between weekday and weekend so you will definitely have your chance to try it out.
The items on the menu does not look like your typical Dim Sum Buffet. I think it looks more like a À la carte buffet. It covers from Soup to Dim Sum to Main Dishes. Ending it with Desserts. Some of the more exquisite dishes are single serving but there is nothing to be disappointed about. There are plenty of other choices in the menu and by the time you are done, you will be quite filled up.
The whole meal starts with the small dish. Caramel Walnuts.
To kick start the main meal, Double-Boiled Mini "Buddha Jumps over the Wall" with Cordycep Flower. This is one of the single serve dishes. Even though it's a buffet dish, this was still very well cooked and there is no less of ingredients.
Deep-Fried Prawn Dumplings served with Mayonnaise Sauce
Steamed Shrimp Dumplings
Steamed Pork Dumplings with Fish Roe. This gives the usual Dumpling a twist to make it a little more classy.
Poached Chinese Spinach with Assorted Eggs in Superior Stock
Wok-fried Diced Beef with Black Pepper Sauce. This is surely one of my favorite dish. The beef is cook nicely that it almost melt in your mouth. Something that you seldom get to taste in a Chinese cuisine.
Quick Fried Hokkaido Scallops with Seasonal Vegetables.
Braised Whole Abalone with Bean Curd in Superior Oyster Sauce.
Deep-fried Prawns tossed in Wasabi Mayonnaise. The surprise are actually from the 2 red platform that are holding up the Prawns. Yes, they are actually Watermelons.
Crispy Soft Shell Crabs coated with Lemon Butter Sauce
Barbecued Platter. Something can be combined into a platter if you just want a bit of each.
Stir-fried Carrot Cake with Chef's Special Homemade XO Chilli Sauce. This is surprisingly tasty.
Pan-fried Rice Flour Rolls with Superior Soya Sauce
Sweet Corn with Crab Meat and Minced Chicken in a Thick Broth. Something not really to my taste. I find it over corny.
Double-Boiled Chinese Cabbage with Mushrooms and Wolfberries. A light and refreshing soup to go with all the heavy dishes.
Steamed Chicken Feet with Abalone Sauce.
Chef's Special Pudding.
Western Cakes.
Chinese Sweetness Soup.
These are really just tip of the ice berg that you will get to eat for the Buffet. This is one buffet that the more the merrier if not, it's a enormous task to try and have a go at each dish.
